The journey of Chef John B. Chacon began in the small town of Alcalde, Northern New Mexico, inspired by the soulful, spice-filled kitchen of his grandmother and the mentorship of Chef Ruby Gallegos. This foundation of "cooking from the heart" was professionalized through a rigorous ACF Apprenticeship, where John was named Apprentice of the Year (1996) and went on to earn Silver and Bronze medals in elite mystery basket competitions. Trained in the classical Escoffier tradition, Chef Chacon’s technical precision is matched only by his deep respect for culinary culture.
The Pursuit of Excellence
Chef Chacon’s career was forged in the high-pressure, VVIP environments of the Las Vegas Strip. Serving as Master Cook and Sous Chef at the iconic Mandalay Bay Resort, he worked under the industry’s most respected Master Chefs to execute world-class events for celebrities, athletes, and titans of industry. His dual experience at the legendary Border Grill "Two Hot Tamales" further sharpened his ability to blend high-volume operational excellence with bold, authentic flavors.
